I love aliphatic. I am not kidding when I say that I love aliphatic. It is what it is. It’s a nice, soft, and pleasant-to-taste ingredient. I am not going to lie, I do like aromatic because it is more intense, more intense flavors. But I am not going to be so bold as to say that all aromatic is aliphatic.
The reason for the differences between aliphatic and aromatic is that we talk a lot about the chemistry of these ingredients, but no one is going to try to tell us what the chemistry is.
